Ingredients:

- 2 cups fresh spinach leaves (palak), washed and chopped

- 200 grams paneer (Indian cottage cheese), cut into cubes

- 1 onion, finely chopped

- 2 tomatoes, finely chopped

- 2 green chilies, chopped (adjust according to taste)

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon garam masala

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 cup heavy cream or yogurt (optional)

- Salt to taste

- 2 tablespoons cooking oil or ghee


Instructions:

1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Add ginger-garlic paste and green chilies. Sauté for another minute.

4. Add chopped tomatoes and cook until they turn mushy and oil starts to separate.

5. Add chopped spinach leaves and cook until they wilt and become soft.

6. Once the spinach is cooked, let the mixture cool down a bit, then blend it into a smooth paste using a blender or food processor.

7. Transfer the blended spinach mixture back to the pan. Add garam masala, coriander powder, turmeric powder, and salt. Mix well and cook for a few minutes.

8. Add paneer cubes to the spinach gravy and simmer for 5-7 minutes, allowing the paneer to absorb the flavors of the gravy.

9. If using heavy cream or yogurt, add it to the pan and stir well. Cook for another couple of minutes.

10. Taste and adjust seasoning if needed. If the gravy is too thick, you can add some water to adjust the consistency.

11. Once done, remove from heat and serve hot with naan, roti, or rice.
